cognac
What is cognac? It’s not just any ordinary spirit; it’s a masterpiece crafted with precision and expertise. Cognac is a type of brandy that hails from the Cognac region in southwestern France. It’s made exclusively from grapes grown in this picturesque area, which gives it its distinct character and terroir.
The production process of cognac involves several meticulous steps. First, the grapes are harvested, pressed, and fermented to create a wine base. This base is then distilled twice using traditional copper stills, known as Charentais pot stills, which impart complexity and depth to the spirit.
After distillation comes aging – an integral part of producing exceptional cognac. The eaux-de-vie (the clear liquid resulting from distillation) are transferred to oak barrels for maturation. Over time, these barrels work their magic by infusing flavors like vanilla, spice, and dried fruits into the spirit.
Cognac categorizes its products based on age statements: VS (Very Special), VSOP (Very Superior Old Pale), XO (Extra Old), and beyond. Each designation reflects the minimum number of years the youngest eau-de-vie has been aged before blending.
